Tuna & Cheese Stuffed Peppers

Sweet pepper halves filled with creamy tuna, sweetcorn and melted Cheddar, air fried until tender and golden.

Ingredients

  • 4 large red peppers, halved lengthways and deseeded
  • 2 x 145g tins tuna in spring water, drained
  • 1 x 198g tin sweetcorn, drained
  • 4 tbsp mayonnaise
  • 2 spring onions, finely sliced
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 120g mature Cheddar cheese, grated

Method

  1. Mix the tuna, sweetcorn, mayonnaise, spring onions, lemon juice, salt and pepper in a bowl, then stir in two thirds of the cheese.

  2. Preheat the air fryer to 180°C.

  3. Spoon the filling into the pepper halves, pressing it down, and sprinkle over the remaining cheese.

  4. Cook the peppers in two batches, upright in the basket, for 14 to 16 minutes each, until the peppers are tender and the cheese is golden.

  5. Use a small piece of crumpled foil to stop them tipping if needed.

  6. Leave to cool for 2 minutes before serving.
