Crispy Sardines with Lemon & Potatoes
Fresh sardines air fried until the skin is crisp, served over lemony potatoes with parsley.
Ingredients
- 8 fresh sardines, scaled and gutted
- 600g baby potatoes, scrubbed and halved
- 3 tbsp vegetable oil
- 1 lemon, zested and cut into wedges
- 2 garlic cloves, crushed
- 1 tsp dried oregano
- 1 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 tbsp fresh parsley, chopped
Method

Toss the potatoes with 2 tablespoons of the oil, half the lemon zest, the garlic, oregano and 1 teaspoon of the salt.

Preheat the air fryer to 200°C, add the potatoes and cook for 15 minutes, shaking the basket every 5 minutes.

Pat the sardines dry, rub with the remaining oil, lemon zest, salt and pepper.

Remove the potatoes from the basket and keep them warm. Cook the sardines in a single layer, in two batches if needed, for 6 to 8 minutes each, turning halfway, until the skin is crisp and the flesh flakes.

Return the potatoes to the basket for the final 2 minutes to reheat.

Serve the sardines over the potatoes with parsley and lemon wedges.
