Ingredients

  • 4 skinless white fish fillets, such as pollock or haddock, about 150g each
  • 4 tbsp plain flour
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 eggs, beaten
  • 80g panko or dried breadcrumbs
  • 1 tsp smoked paprika
  • 1 tbsp vegetable oil
  • lemon wedges and tartare sauce, to serve

Method

  1. Pat the fish fillets dry with kitchen paper.

  2. Mix the flour, half the salt and the pepper on one plate. Put the eggs on a second plate. Mix the breadcrumbs, paprika and remaining salt on a third plate.

  3. Coat each fillet in the flour, then the egg, then the breadcrumbs, pressing on firmly.

  4. Preheat the air fryer to 200°C and brush or spray the fillets lightly with the oil.

  5. Cook in a single layer, in two batches if needed, for 10 to 12 minutes, turning carefully halfway, until golden and the fish flakes easily.

  6. Serve with lemon wedges and tartare sauce.
