Crispy Beef Meatballs & Potatoes
Seasoned beef meatballs air fried alongside crisp potato chunks for a filling, budget-friendly meal in one basket.
Ingredients
- 500g beef mince
- 1 small onion, grated
- 2 garlic cloves, crushed
- 40g dried breadcrumbs
- 1 egg
- 1 tsp dried mixed herbs
- 2 tsp salt
- 1/2 tsp ground black pepper
- 600g potatoes, scrubbed and cut into 2cm chunks
- 2 tbsp vegetable oil
- 1 tsp smoked paprika
- tomato ketchup or gravy, to serve
Method

Soak the potatoes in cold water for 10 minutes, drain and dry thoroughly with a clean tea towel.

Mix the mince, onion, garlic, breadcrumbs, egg, herbs, 1 teaspoon of the salt and the pepper in a large bowl and shape into 16 meatballs.

Toss the potatoes with the oil, paprika and remaining salt.

Preheat the air fryer to 200°C, add the potatoes and cook for 10 minutes, shaking halfway.

Add the meatballs to the basket and cook for a further 14 to 16 minutes, shaking the basket every 5 minutes, until the potatoes are crisp and the meatballs are browned and cooked through with no pink meat.

Serve with ketchup or gravy.
