Crispy Scotch Eggs
Soft-boiled eggs wrapped in seasoned sausage meat and breadcrumbs, air fried until crisp and golden.
Ingredients
- 4 medium eggs, plus 1 more egg, beaten, for coating
- 400g pork sausage meat
- 1 tsp dried sage
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3 tbsp plain flour
- 70g dried breadcrumbs
- 1 tbsp vegetable oil
- piccalilli or mustard, to serve
Method

Boil the 4 eggs in a pan of boiling water for 7 minutes, then cool in iced water for 10 minutes and peel carefully.

Mix the sausage meat with the sage, salt and pepper and divide into 4 equal portions.

Flatten each portion into a round on a piece of cling film, place an egg in the centre and wrap the sausage meat around it, sealing any gaps.

Roll each one in the flour, then the beaten egg, then the breadcrumbs.

Preheat the air fryer to 180°C and brush or spray the scotch eggs lightly with the oil.

Cook for 15 to 17 minutes, turning halfway, until golden and the sausage meat is cooked through with no pink meat.

Leave to cool for 5 minutes and serve warm or cold with piccalilli or mustard.
